Spiced Carrot-Apple Soup with Fresh Mint

Instructions
Heat chicken fat in large saucepan over medium-high heat.
Add onion; sauté 2 minutes.

Remove carrot halves; dice finely. Puree soup in batches in blender; return to pan.
