Instructions
Bring a medium saucepan half full of water to a boil.
Add 3 cups fresh peas (from 2 lb. pea pods); reduce heat and simmer until tender, 7 to 10 minutes.
Drain and rinse with cold water. Just before serving, melt 2 Tbsp. unsalted butter over medium heat.
Add peas, 1 Tbsp. fresh lemon juice, 2 tsp. fresh thyme, 1/2 tsp. salt and 1/4 tsp. pepper. Cook, stirring, until heated, about 5 minutes.
