Black Bean and Rice Enchiladas
Need If you have cheddar cheese, canned tomatoes, flour tortillas, and a few other ingredients on hand, you can make it. From preparation to the plate, this recipe takes approximately 1 hour and 10 minutes. It is an affordable recipe for fans of Mexican food.
Instructions
In a large nonstick skillet, saute the green pepper, onion and garlic in oil until tender.
Add the beans, tomatoes, picante sauce, chili powder, cumin and red pepper flakes; bring to a boil. Reduce heat; simmer, uncovered, until heated through and mixture thickens.
Add rice; cook 5 minutes longer or until heated through.
Spoon a rounded 1/2 cup down the center of each tortilla. Fold sides over filling and roll up.
Place in a 13-in. x 9-in. baking dish coated with cooking spray. Spoon salsa over each tortilla. Cover and bake at 350° for 25 minutes. Uncover; sprinkle with cheese and cilantro.
Bake 2-3 minutes longer or until cheese is melted.
Recommended wine: Pinot Noir, Riesling, Sparkling Rose
Pinot Noir, Riesling, and Sparkling rosé are my top picks for Enchilada. Acidic white wines like riesling or low-tannin reds like pinot noir can work well with Mexican dishes. Sparkling rosé is a safe pairing too. You could try King Estate Domaine Pinot Noir. Reviewers quite like it with a 4.6 out of 5 star rating and a price of about 50 dollars per bottle.
