Instructions
30 minutes before cooking tilapia, cut tortillas into triangles, spritz with olive oil, season with salt and pepper, and lay on a baking sheet.
Bake at 375 for 15-20 minutes, watching closely and flipping halfway through. You can either bake the tilapia (400 degrees for about 15-18 minutes, depending on how thick the filets are) or pan-fry it.
Heat a skillet on medium heat and spray with olive oil. Cook tilapia for about 3-4 minutes per side.Once fish is cooked, flake it with a fork and mix with chopped shallots, chopped avocado, remaining lime zest, cilantro and/or mint. I loved the combination or cilantro and mint, but I would suggest trying it before making an entire bowl of it.
Add a few spoonfuls of tilapia mix to tortilla chips.
Garnish with sour cream or greek yogurt and salsa verde. No fear. I will be back tomorrow to contribute to your holiday weight gain. Tis the season!posted in Recipes, Seafood88 comments
Recommended wine: Pinot Grigio, Gruener Veltliner, Pinot Noir, Sparkling Wine
Pinot Grigio, Gruener Veltliner, and Pinot Noir are my top picks for Tilapia. Fish is as diverse as wine, so it's hard to pick wines that go with every fish. A crisp white wine, such as a pinot grigio or Grüner Veltliner, will suit any delicately flavored white fish. Meaty, strongly flavored fish such as salmon and tuna can even handle a light red wine, such as a pinot noir. One wine you could try is Rabble Pinot Gris. It has 4.9 out of 5 stars and a bottle costs about 20 dollars.
Rabble Pinot Gris
Late morning fog, continually cool days and chilling afternoon winds add to a delicate yet flavorful wine. This Pinot Gris has a light golden color and a complex, fruit-scented nose that revealslayers of mango, jasmine tea, cinnamon, and cantaloupe. Smooth, light toasted walnut and honey balance the fruits, and give way to a crisp, lingering finish full of freshly cut grass and peaches.
