Instructions
Pour two tablespoons of oil into a large pot set over medium heat.
Add the onion and the sun-dried tomatoes, along with 1/4 teaspoon salt. Cook for about 6 minutes or so until the onion is browned. Toss in the garlic and paprika. Cook for an additional minute, stirring occasionally.
Add the beans, water, spinach, and 1/4 teaspoon salt. Cover the pot and cook for 5 minutes, stirring occasionally. Season with salt and pepper to taste and drizzle with the remaining olive oil.
