Instructions
Arrange oven racks in the lower and upper third of the oven.
Heat 2 tablespoons of oil in a large, nonstick skillet over medium-high heat and brown sausage on both sides until almost done, about 3 minutes; drain on paper towels. While sausage cooks, roll out dough on a well-floured surface to two 10- x 14-inch rectangles or 12-inch rounds and transfer to two ungreased baking sheets. Divide the sausage between both rectangles and top with zucchini and peppers.
Sprinkle with thyme and drizzle with remaining oil. Season with salt and pepper.
Bake pizzas for 15 minutes.
Remove from oven and top with provolone. Return to oven 2 to 3 minutes until the cheese melts, the edges of the pies are lightly browned, and the sausage is thoroughly cooked.
