Preheat the oven to 400F (200C). Line a large baking sheet with parchment paper.
Melt the butter in a medium frying pan over medium-low heat.
Add the leeks, cover, and cook, stirring occasionally, for 15 minutes or until tender. Cool.
Mix the cream cheese, Parmesan, cream, chives, and nutmeg together in a bowl. Stir into the leeks and season with salt and pepper.
On a lightly floured work surface, roll 1 pastry sheet into a 12 9 in (30 20cm) rectangle, then trim 1 in (2.5cm) from the short side.
