Ham and Black-Eyed Pea Salad with Orange-Baked Ham
Need From preparation to the plate, this recipe takes around 45 minutes. If you have pepper, parsley, green onions, and a few other ingredients on hand, you can make it. To use up the water you could follow this main course with the Watermelon-Peach Slushies as a dessert.
Instructions
Bring 2 cups water to a boil in a medium saucepan; add peas and bay leaf. Cover, reduce heat, and simmer 30 minutes.
Remove and discard bay leaf.
Baked Ham, and next 6 ingredients in a bowl.
Combine vinegar and remaining ingredients in a small bowl. Stir with a wire whisk until blended.
Pour over vegetable mixture; toss gently. Cover and chill at least 2 hours.
