Instructions
Cut the pork crosswise into 8 slices; sprinkle with 1/4 teaspoon salt and pepper.
Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat.
Add pork; cook 2 minutes on each side or until browned.
Add 1/4 teaspoon salt, dates, and remaining ingredients. Cover; simmer 2 minutes or until pork is done.
Remove pork from pan. Bring date mixture to a boil; cook until reduced to 2/3 cup (about 5 minutes).
Garnish with parsley sprigs, if desired.
