Instructions
Place racks in lower and upper thirds ofoven; preheat to 350°F.
Heat 8 ounces chocolatein a heatproof bowl set over a saucepan ofsimmering water (bowl should not touchwater), stirring until chocolate is melted; letcool slightly. Reserve saucepan for meltingmore chocolate for glaze.
Whisk flour, baking powder, and salt ina small bowl; set aside. Using an electricmixer on medium-high speed, beat brownsugar and butter until light and fluffy, about4 minutes.
Add eggs and crème fraîcheand beat until just combined. Reducespeed to low and gradually mix in meltedchocolate; reserve chocolate bowl.
