Place the roast on your work surface with one long side facing you. Using a sharp knife, make a horizontal cut in the roast lengthwise one-third down from the top and all the way from end to end. Do not cut all the way through to the other side; cut only to within inch of the other side. You have just created a flap like the cover of a book. Open that flap.
