Instructions
Preheat the oven to 350°F.
Cream the butter and sugar until light and fluffy.
Add the eggs and vanilla and beat well.
In a small bowl, whisk together the flour, baking soda, salt, and cinnamon.
Add to the butter mixture and mix until just combined. Stir in the oats, raisins, sunflower seeds, coconut, and nuts and/or chocolate chips (if using).
