Instructions
Toss chicken with ancho chilepowder, cumin, and 2 teaspoons salt in alarge bowl to coat. Cover and chillfor 2 hours.
Heat a large cast-ironskillet over medium-high heat. Coatpan with a thin layer of oil. Workingin batches, place thighs in skillet ina single layer (do not crowd). Coverand cook until a crust forms, about5 minutes. Turn; cook, uncovered,until thighs are just cooked through,3-4 minutes longer.
Transfer to aplatter; let rest for 5 minutes.
Cut chicken into 1/2" cubes.
