Instructions
Place unpeeled potatoes and 1 teaspoon salt in a large saucepan; cover with water. Bring to boil over high heat. Cover, reduce heat to medium-low, and cook 25 minutes or until potatoes are tender.
Drain and cool slightly. Peel potatoes, and cut lengthwise into 1/4-inch-thick slices.
Cut bell pepper in half lengthwise; discard seeds and membranes.
