Instructions
Mix yuca and half of the garlic in large saucepan.
Add enough cold water to completely cover the yuca. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 20 min. or until yuca is tender.
Meanwhile, combine remaining garlic, the dressing, black pepper and cumin in small saucepan; cook on medium heat 4 min. or until heated through, stirring occasionally.
Add chicken stock and lime juice; mix well. Bring to boil.
Drain yuca; place in serving bowl.
Add dressing mixture; mix lightly.
Sprinkle with cheese and parsley.
