Fried Eggplant
You can never have too many side dish recipes, so give Fried Eggplant If you have bread crumbs, sea salt, extra virgin olive oil, and a few other ingredients on hand, you can make it. It is a good option if you're following a dairy free diet. From preparation to the plate, this recipe takes roughly 1 hour.
Instructions
Heat the olive oil to 365F in a large deep skillet. Beat the eggs in a wide shallow bowl.
Put the bread crumbs in another shallow bowl. Working in batches, dip the eggplant in the eggs and then in the bread crumbs, turning to coat, and add to the hot oil, without crowding. Fry until golden brown, about 5 minutes.
Drain on paper towels, sprinkle with salt, and serve.
