Double-Mango Salad
Need Head to the store and pick up ground coriander, lime juice, strawberries, and a few other things to make it today. From preparation to the plate, this recipe takes approximately 45 minutes.
Instructions
Place 3/4 cup mango in a food processor; process until finely chopped.
Add lime juice, oil, coriander, and salt; process until smooth, scraping sides of bowl once.
Combine 1/4 cup mango, greens, and strawberries in a large bowl. Divide salad between 2 serving dishes, and sprinkle with nuts.
