To prepare the souffls, lightly coat 6 (8-ounce) souffl dishes with cooking spray.

Combine remaining 1/2 cup sugar, 3 tablespoons flour, 3 tablespoons cocoa, and salt in a medium saucepan over medium-high heat, stirring with a whisk.
