Dinner Tonight: Steamed Chicken with Ginger and Scallions

Instructions
Bring a large pot of water to boil. Meanwhile, mix together 2 tablespoons of ginger, 2 chopped scallions, 2 tablespoons peanut oil, 1 tablespoon white vinegar, 2 teaspoons sesame oil, 1 teaspoon sugar, and 1/2 teaspoon salt. Coat the chicken pieces with the mixture.
Set a steamer basket over the boiling water. Set the chicken pieces in and cook until done, about 45 minutes to 1 hour.
When the chicken is almost done, heat up a large skillet over medium high heat.
Pour in 1 tablespoon of the peanut oil, then add 4 tablespoons of ginger, 4 scallions, 2 cloves garlic. Cook for 30 seconds or until fragrant.
While that is quickly cooking, mix together the cornstarch and chicken stock. When the 30 seconds is up, add the mixture. Stir constantly until the sauce has thickened.
Pour in 2 teaspoons of the sesame oil, and turn off the heat.
Plate the chicken and pour the sauce on top.
