Instructions
Preheat oven to 450 degrees. Using a sharp knife remove the tip and first joint of the wing of each chicken breast, and discard, leaving the second joint still attached to the breast. Season chicken with salt and pepper.
Heat remaining 2 tablespoons grapeseed oil in a large heavy-bottomed ovenproof skillet over high heat.
