Instructions
Fill sink with ice water. In a stockpot, combine onion, carrot, bay leaves, garlic, ginger, zest, and peppercorns with 8 cups water; cover and bring to a boil.

Remove lobsters, reserving the liquid; transfer to the ice bath.
