Instructions
Combine first 4 ingredients in a large mixing bowl. Beat at medium speed of an electric beater until smooth.
Combine flour and next 4 ingredients; stir well.
Add to sugar mixture, mixing well. Stir in oats, raisins, and, if desired, coconut.
Drop dough by heaping teaspoonfuls onto lightly greased cookie sheets.
Bake at 350 for 10 minutes. Cool slightly on cookie sheets; remove cookies to wire racks, and let cool completely.
