Instructions
Heat the oil in a large pan and add the onions and garlic. Cook gently for a few minutes then add the carrots, pepper, chillies and mushrooms.Continue to cook for a further couple of minutes without burning.
Add the celeriac, thyme and the beef. Again, stir well and continue to cook for a further few minutes.Finally, add the tomatoes, wine and Marsala and some seasoning. Bring to the boil, cover, reduce the heat and simmer gently for 40 minutes.
Add the aduki beans and the kale, mix well and cook for a further 10 minutes or until the kale is cooked.
Serve with baked potatoes and another green vegetable.
