Zucchini Ribbon Salad
Zucchini Ribbon Salad is A mixture of cider vinegar, dijon mustard, dill weed, and a handful of other ingredients are all it takes to make this recipe so tasty. From preparation to the plate, this recipe takes roughly 20 minutes.
Instructions
Using vegetable peeler or mandolin slicer, cut zucchini lengthwise into thin ribbons.
In medium bowl, beat oil, vinegar, dill, mustard and honey with whisk until well blended. Stir in salt and pepper to taste.
Add zucchini; toss gently to coat.
Divide zucchini evenly among 4 serving plates. Top each with feta cheese.
