Melissa's Mussels
Melissa's Mussels is a gluten free, dairy free, and primal recipe with 4 servings. This recipe covers 39% of your daily requirements of vitamins and minerals. One portion of this dish contains about 37g of protein, 7g of fat, and a total of 342 calories. From preparation to the plate, this recipe takes about 40 minutes. It works well as a reasonably priced hor d'oeuvre. If you have canned tomatoes, peppercorns, onion, and a few other ingredients on hand, you can make it.
Instructions
In a large pot (or the kitchen sink basin), soak the mussels 10 minutes in enough lightly salted cold water to cover.
In a separate large pot, mix the onion, tomatoes, garlic, beer, wine, and peppercorns.
Place the mussels in the pot, and bring to a boil. Cook 10 minutes, reduce heat to low, and continue cooking 5 minutes, until mussels open. Discard unopened mussels.
Recommended wine: Chardonnay, Muscadet, Riesling
Chardonnay, Muscadet, and Riesling are my top picks for Shellfish. Buttery chardonnay is great for scallops, shrimp, crab, and lobster, while muscadet is a classic pick for mussels, oysters, and clams. If you've got some spice in your shellfish, a semi-dry riesling can balance out the heat. The Foley Estate Winery Sta. Rita Hills Chardonnay with a 4.3 out of 5 star rating seems like a good match. It costs about 27 dollars per bottle.
