Stir coffee, maple syrup, sugar, andespresso powder in a medium saucepanover medium-high heat until sugardissolves. Bring mixture to a boil; cook untilthickened and reduced by half, 6-7 minutes.
Remove syrup from heat; add bourbonand 2 tablespoons butter. Reduce heat to mediumand simmer until sauce is reduced to about3/4 cup, 40-45 minutes (mixture shouldbe thick enough to coat a spoon, but notsticky, and will thicken as it cools).
