Instructions
Combine first 6 ingredients in a small bowl; rub over all sides of pork.
Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat.
Add pork and cook 3 minutes; turn and cook 2 minutes on other side or until browned.
Wrap handle of pan with foil.
Bake at 375 for 18 minutes or until a thermometer registers 160 (slightly pink).
Remove from oven, tent with foil, and let stand 5 minutes before slicing.
