Instructions
Heat olive oil in a large saucepan over medium heat.
Add the shallots, and cook for 4 minutes. Stir in the rice, and saut for 2 minutes.
Add the broth, wine, salt, and pepper, and bring to a boil. Cover, reduce heat, and simmer for 20 minutes. Stir in arugula and pistachios.
