Instructions
Preheat oven to 350°F;. Spray a 9x13-inch baking pan with non-stick cooking spray. In small bowl, whisk together white rice flour, sweet rice flour, cornstarch, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
In stand mixer fitted with paddle attachment, cream butter and sugar together until thick paste forms, about 45 seconds.
Add eggs, one at a time, and vanilla.
Mix until fluffy, about one minute. Stop mixer. Scrape down sides and bottom of bowl.
Add whisked dry ingredients. Turn mixer to medium-low. Beat until a thick batter forms. Turn off mixer.
