Heat oil in a medium pot over medium-high heat until shimmering.
Add onions and cook, stirring occasionally, until onions are starting to brown, about 8 minutes.
Add garlic and cook, stirring constantly, until fragrant, about 30 seconds.
Add oregano and cumin and cook, stirring constantly, until fragrant, about 30 seconds.
