Instructions
Heat oil in a large saucepan over medium heat.
Add onion and garlic; saut 5 minutes. Stir in 1 tablespoon coriander.
Add chicken broth and carrot; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until carrot is tender.
Transfer mixture in batches to a blender or food processor, and process 1 minute or until very smooth. Stir in 2 tablespoons lime juice and salt. Set aside.
