Combine first 5 ingredients in a small bowl.
Line a baking sheet with foil; coat foil with cooking spray.
Place fish, skin side down, on prepared baking sheet.
Sprinkle evenly with parsley, salt, and pepper.
Bake at 400 for 8 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
Serve with olive mixture.
