Instructions
Heat 1 1/2 tsp. oil in a large nonstick skillet over medium-high heat.
Add pumpkin seeds; saut until beginning to brown and pop, about 2 minutes.
Transfer seeds to paper towels to drain; let cool. Reserve skillet. Pulse 6 Tbsp. pumpkin seeds, cilantro, coriander seeds, and garlic in a food processor until coarsely chopped. With machine running, gradually add 1 Tbsp. lime juice, 1/4 cup oil, then 1/4 cup water, blending until coarse pure forms. Season pesto to taste with salt, pepper, and more lime juice, if desired.
Heat remaining 1 tsp. oil in reserved skillet over medium heat. Season salmon fillets with salt and pepper.
Add to skillet and cook until just opaque in center, 34 minutes per side.
Place fillets on plates. Spoon pesto over.
Garnish with remaining pumpkin seeds.
Recommended wine: Chardonnay, Pinot Noir, Sauvignon Blanc
Salmon on the menu? Try pairing with Chardonnay, Pinot Noir, and Sauvignon Blanc. To decide on white or red, you should consider your seasoning and sauces. Chardonnay is a great friend to buttery, creamy dishes, while sauvignon blanc can complement herb or citrus-centric dishes. A light-bodied, low-tannin red such as the pinot noir goes great with broiled or grilled salmon. You could try La Crema Russian River Chardonnay. Reviewers quite like it with a 4.1 out of 5 star rating and a price of about 28 dollars per bottle.
La Crema Russian River Chardonnay
On the nose are citrus tones, with green apple, pineapple and floral aromas accentuated by caramel and hazelnut traces. The bright fruit and crisp acidity typical of the Russian River appellation are apparent in the mouth, with lemon-lime components and concentrated pear notes, offset by a lingering apple and spice finish.
