Instructions
Butter and flour a 10-inch tube pan.
Combine the flour, cinnamon, nutmeg, cloves and salt.
In a bowl, beat the butter until creamy. Beat in the sugar.
Add the eggs, 1 at a time, beating after each addition.
Add the Calvados, baking soda mixture and vanilla. Stir in the flour mixture, apples and pecans just until incorporated.
Scrape the batter into the prepared pan and bake for about 1 hour, or until the cake is deep brown and a toothpick inserted in the center comes out clean.
Let the cake cool completely, then turn it out onto a plate.
