Instructions
Mix together mashed potatoes, cheese and scallions until thoroughly combined. Form potato mixture into 8 evenly sized patties. In separate trays, place flour, eggs and breadcrumbs; coat each patty in flour, then eggs, then breadcrumbs.
Heat a large skillet over medium high heat and add a knob of butter. Working in batches, fry patties until golden brown.
