The recipe Posole with Southern Greens, Chayote, Dried Cherries, and Pecans could satisfy your Southern craving in roughly 45 minutes. This recipe serves 6. One portion of this dish contains approximately 3g of protein, 16g of fat, and a total of 213 calories. It works well as a rather cheap side dish. If you have cider vinegar, vegetable stock, garlic cloves, and a few other ingredients on hand, you can make it. It is a good option if you're following a gluten free, primal, and vegetarian diet.
Instructions
Drain the posole and place in a saucepan. Cover with the stock and bring to a boil. Reduce the heat to a simmer and cook for 1 hour, or until the posole is tender.
Drain and reserve the posole and cooking liquid separately.
In a stockpot, heat the olive oil until lightly smoking.
Add the onion and sauté for 1 minute over high heat.
Add the garlic and cook for 1 minute longer.
Add the greens, chayotes, and 1 cup of the posole cooking liquid. Cover the pan, reduce the heat to a simmer, and cook for 20 minutes, or until the greens are tender.
Remove the lid and ad the dried cherries, pecans, vinegar, and reserved posole. Cook over low heat, uncovered, for 10 minutes. Stir in the butter and season with salt.

Recommended wine: Riesling, Sparkling Wine, Zinfandel
Southern can be paired with Riesling, Sparkling Wine, and Zinfandel. In general, there are a few rules that will help you pair wine with southern food. Food-friendly riesling or sparkling white wine will work with many fried foods, while zinfandel is great with barbecued fare. The Schloss Vollrads Riesling Spatlese with a 4 out of 5 star rating seems like a good match. It costs about 29 dollars per bottle.

Schloss Vollrads Riesling Spatlese
Classic natural sweet Spatlese with nice acidity and elegant, natural residual sugar. Selective harvest, gentle processing of the must, systematic clarification, slow fermentation and careful finishing are the basics for this traditional Vollrads' Riesling. This wine pairs perfectly with Asian cuisine due to the harmony of sweetness and acidity. Also interesting taste combinations can be achieved through the pairing of blue-veined cheese or a fruit dessert.
