Heat over low heat, stirring until gelatin is completely dissolved and caramels are melted. Refrigerate for 1-2 hours or until mixture mounds when stirred with a spoon.
Stir pecans and vanilla into caramel mixture. Fold in whipped cream.
Pour into crust. Refrigerate for 6 hours or overnight.
Garnish with ice cream topping and pecans if desired. Store in the refrigerator.
Recommended wine: Vin Santo, Late Harvest Riesling, Lambrusco Dolce
Pie works really well with Vin Santo, Late Harvest Riesling, and Lambrusco Dolce. These wines are all sweet, which is important since wine should usually be sweeter than the food you're pairing with it. The Medici Ermete Concerto Lambrusco Reggiano with a 5 out of 5 star rating seems like a good match. It costs about 23 dollars per bottle.
