Bake at 400° for 8-10 minutes or until golden. Cool on a wire rack.
For filling, combine sugar and eggs in a small saucepan until well blended. Cook over low heat, stirring constantly until mixture coats the back of a metal spoon and reaches 160°.
Remove from the heat. Stir in chocolate and almond extract until smooth. Cool to lukewarm (90°), stirring occasionally.
In a large bowl, cream butter until light and fluffy.
Add cooled egg mixture; beat on high speed for 5 minutes.
Pour into cooled pie shell. Refrigerate for at least 6 hours before serving.
Garnish with whipped cream and almonds if desired. Refrigerate leftovers.
Recommended wine: Cream Sherry, Vin Santo, Port Wine, Moscato Dasti, Late Harvest Riesling, Lambrusco Dolce
Cream Sherry, Vin Santo, and Port Wine are my top picks for Silk Pie. A common wine pairing rule is to make sure your wine is sweeter than your food. Delicate desserts go well with Moscato d'Asti, nutty desserts with cream sherry, and caramel or chocolate desserts pair well with port. The NV Solera Cream Sherry with a 4.5 out of 5 star rating seems like a good match. It costs about 17 dollars per bottle.

NV Solera Cream Sherry
The Solera Cream Sherry has a brilliant amber and deep copper hue. With butterscotch and pecan aromas, the sweet salted nut and brown spice aromas carry a complex caramel accent. A sweet entry leads to a rounded, lush, moderately full-bodied palate with a lengthy, flavorful finish.
