Instructions
Place tofu in a single layer on several layers of paper towels; cover with additional paper towels.
Let stand 30 minutes, pressing down occasionally.
Combine salt, white pepper, and turkey in a large bowl.
Combine hoisin, vinegar, soy sauce, sugar, cornstarch, pepper, and garlic in a medium bowl, stirring with a whisk.
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
Add tofu; cook 6 minutes or until browned on all sides, stirring occasionally.
Remove tofu from pan; keep warm. Recoat pan with cooking spray; add turkey mixture to pan. Cook 3 minutes or until turkey loses its pink color, stirring to crumble. Stir in hoisin mixture, tofu, and peas; cook 2 minutes or until thoroughly heated.
