Instructions
Preheat oven to 400 degrees F (200 degrees C). Rinse fish, and pat dry.
Rub fillets with olive oil, and season with garlic salt and black pepper.
Place each fillet on a large sheet of aluminum foil. Top with jalapeno slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets. Carefully seal all edges of the foil to form enclosed packets.
Place packets on baking sheet.
Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork.
Recommended wine: Pinot Noir, Pinot Grigio, Gruener Veltliner
Fish works really well with Pinot Noir, Pinot Grigio, and Gruener Veltliner. Fish is as diverse as wine, so it's hard to pick wines that go with every fish. A crisp white wine, such as a pinot grigio or Grüner Veltliner, will suit any delicately flavored white fish. Meaty, strongly flavored fish such as salmon and tuna can even handle a light red wine, such as a pinot noir. The Parducci Small Lot Pinot Noir New Label Wine with a 5 out of 5 star rating seems like a good match. It costs about 18 dollars per bottle.

Our Pinot Noir offers aromas of Juicy, ripe raspberries and strawberries. Its berry flavors are full and rich on the palate, picking up a hint of cedar in the finish. Enjoy this medium bodied red wine with grilled salmon, pork tenderloin, and fine cuts of red meat.
