Alder Roasted King Salmon with Wild Fennel Pollen
Need a gluten free, dairy free, fodmap friendly, and pescatarian main course? Alder Roasted King Salmon with Wild Fennel Pollen could be an amazing recipe to try. One serving contains 704 calories, 90g of protein, and 31g of fat. This recipe serves 12. A mixture of extra virgin olive oil, brown sugar, cedar planks, and a handful of other ingredients are all it takes to make this recipe so flavorful. To use up the anise you could follow this main course with the Fig And Anise Clafoutis as a dessert. From preparation to the plate, this recipe takes roughly 44 minutes.
Instructions
Mix sugar, salt, water, and anise flavored liqueur.
Pour over salmon halves in a 3-inch deep pan. Marinate, chilled, in the brine mixture for 4 to 8 hours.
Remove from brine and pat dry.
Brush the salmon with oil. Season with wild fennel pollen, salt, and pepper.
Place on Alder plank and soak in cold water overnight. Sometimes a nail through the tail end is used to hold the salmon in place. Lean the plank against an Alder wood fire that has mostly died down to very hot coals. Be careful not to let the plank catch fire. The heat and the smoke from the fire will cook and season the salmon.
Serve right off the plank.
Recommended wine: Chardonnay, Pinot Noir, Sauvignon Blanc
Chardonnay, Pinot Noir, and Sauvignon Blanc are my top picks for Salmon. To decide on white or red, you should consider your seasoning and sauces. Chardonnay is a great friend to buttery, creamy dishes, while sauvignon blanc can complement herb or citrus-centric dishes. A light-bodied, low-tannin red such as the pinot noir goes great with broiled or grilled salmon. The 7Cellars Elway's Reserve Chardonnay with a 4.9 out of 5 star rating seems like a good match. It costs about 28 dollars per bottle.

The 2018 Elway’s Reserve Carneros Chardonnay is well-balanced, exhibiting crisp tropical fruit, apple and pear flavors with light floral elements. Hints of vanilla complement a smooth, lingering oak finish.Pair this crisp wine with light fare such as sliced fruit & cheeses, lemon pasta salad, roasted chicken with herbs, or vanilla pudding.
