Instructions
Place the potatoes into a large pot, and fill with enough water to cover by 1 inch.
Add the onion, garlic, basil, 1 teaspoon of salt and 1/2 teaspoon of pepper, and bring to a boil. Cook until potatoes are tender, about 15 minutes.
Drain the contents of the pot in a colander, then transfer to a large bowl.
Add the sour cream, butter, milk and food coloring, and beat with an electric mixer until light. Adjust milk if needed. Do not beat too long, or the potatoes will become stiff and pasty. Taste and adjust salt and pepper before serving.
