Soak the cedar plank in water for at least 3 hours.
Combine the rosemary, parsley, garlic salt, and salt in a small bowl. Stir the honey into the melted butter.
Brush the cod fillets with the honey butter.
Sprinkle the herb mixture over the butter. Refrigerate the seasoned fish for 30 minutes.
Preheat an outdoor grill for medium-low heat.
Brush one side of the cedar plank with the olive oil. Center the fish on the oiled plank.
Place plank directly on the grate of the grill. Cook over medium-low heat until fish flakes with a fork, 20 to 30 minutes.
Recommended wine: Pinot Grigio, Gruener Veltliner, Pinot Noir
Cod works really well with Pinot Grigio, Gruener Veltliner, and Pinot Noir. Fish is as diverse as wine, so it's hard to pick wines that go with every fish. A crisp white wine, such as a pinot grigio or Grüner Veltliner, will suit any delicately flavored white fish. Meaty, strongly flavored fish such as salmon and tuna can even handle a light red wine, such as a pinot noir. The Thrive Pinot Grigio with a 4.5 out of 5 star rating seems like a good match. It costs about 15 dollars per bottle.
