Savory Stuffed Chicken Breasts
Need Head to the store and pick up onion, ham, lemon-pepper seasoning, and a few other things to make it today. To use up the flour you could follow this main course with the Apple Tart with Caramel Sauce as a dessert.
Instructions
In a small saucepan, saute the apple, ham, mushrooms and onion in 1 tablespoon oil until onion and apple are tender. Stir in mustard, bread crumbs and lemon-pepper. Flatten chicken breasts to 1/4-in. thickness; top each with the apple mixture.
Roll up and secure with toothpicks. Coat with flour.
In a skillet, brown chicken in remaining oil.
Place in an 8-in. square baking dish.
Bake, uncovered, at 350° for 20-30 minutes or until juices run clear. Discard toothpicks.
