Instructions
Preheat the oven to 400°F.
Meanwhile, season both sides of the fish fillets with 1/4 teaspoon of the salt. In a baking dish big enough to hold all the fillets in one layer, pour in 3 tablespoons of the olive oil, the lemon juice, white wine, and another 1/4 teaspoon of salt.
Whisk this mixture together with a fork, and then add the smashed garlic.
Add the fillets to the baking dish, turning to coat in the dressing. Arrange them skin-side down.
In a medium-sized bowl, combine the lemon zest, parsley, oregano, red pepper flakes, and the remaining 1/4 teaspoon of salt.
Add the remaining 3 tablespoons of olive oil. Toss well, until the bread crumbs are moist.
Spoon the bread crumb mixture on top of the fish fillets in a light, even layer.
Transfer baking dish to the oven and cook until fish fillets are cooked and the bread crumbs are browned. Baking time will depend on the thickness of the fillets. Mine took less than 10 minutes, though it could take 15 to 20 minutes.
Serve the fillets with the juices left in the baking dish.
Recommended wine: Pinot Grigio, Gruener Veltliner, Pinot Noir
Fish works really well with Pinot Grigio, Gruener Veltliner, and Pinot Noir. Fish is as diverse as wine, so it's hard to pick wines that go with every fish. A crisp white wine, such as a pinot grigio or Grüner Veltliner, will suit any delicately flavored white fish. Meaty, strongly flavored fish such as salmon and tuna can even handle a light red wine, such as a pinot noir. One wine you could try is Skyfall Pinot Gris. It has 4.8 out of 5 stars and a bottle costs about 13 dollars.
