Instructions
Combine 4 cups whole milk, 1 cup cream, 1 1/2 teaspoons kosher salt, and 2 tablespoons lemon juice in a saucepan and bring just to a boil without stirring. Immediately remove pan from heat.
Let mixture standfor 15 minutes at roomtemperature. As timepasses, the curds willbegin to separatefrom the whey. If onlya few curds form, yourlemons may not beacidic enough; addanother 1 tablespoonlemon juice, gentlystir so you don't breakup the curds toomuch, and let standfor 5 minutes more.
Using a largespoon (not slotted)or measuring cup,spoon curds intoa cheeseclothlinedsieve set overa large bowl. Thelonger you drain thericotta, the denserand more flavorfulthe cheese will be.
