In a large bowl, using your hands mix together pork, coriander, curry powder, Worcestershire, cayenne, scallions and garlic, seasoning well with salt and pepper. Make 6 even patties and put in refrigerator until ready to cook.
Heat a large fry pan over medium-high heat, add oil. Sear patties until golden brown on both sides and cooked through, about 5 minutes per side. Cook in batches, if necessary.
Serve inside hamburger buns topped with lettuce leaf, tomato slice and spicy ketchup.
In a saucepan over medium heat, lightly saute garlic in butter, about 2 minutes.
Add ketchup, red pepper flakes and cayenne pepper. Cook another 5 minutes.
Remove from heat and stir in scallions. Cool before serving.
Recommended wine: Merlot, Malbec, Zinfandel
Burger works really well with Merlot, Malbec, and Zinfandel. Merlot will be perfectly adequate for a classic burger with standard toppings. Bolder toppings call for bolder wines, such as a malbec or peppery zinfandel. The Nickel & Nickel Harris Vineyard Merlot with a 4.2 out of 5 star rating seems like a good match. It costs about 40 dollars per bottle.

Nickel & Nickel Harris Vineyard Merlot
Harris Vineyard is located in western Oakville, just east of the Branding Iron Vineyard. Nickel & Nickel's five acres are comprised of two blocks that offer a southern exposure and soil of gravelly clay loam. Thinning passes allow each cluster to hang freely, optimizing the trellis system, and taking advantage of the warm climate to reach full maturity. The Harris Merlot is very consistent from vintage to vintage, and this wine is no exception. Beautiful berry and plum fruit integrate with flavors of sage, cigar, earth and dried herb. This vintage has an appealing dusty element and the oak adds a hint of char. The silky texture and round tannins carry these flavors through to a long, balanced finish.
