Ingredients: 2 Tbsps olive oil, plus extra to serve; 140 grams cubed pancetta or diced smoked streaky bacon; 300 grams baby courgettes, thickly sliced on the diagonal, or 3 medium courgettes, cut into chunks; 2 garlic cloves, finely chopped; 1 pinch pinch dried chilli flakes; 1 pinch pinch caster sugar; 1 Tbsp red wine vinegar; 2 x 400g cans good-quality plum tomatoes; 400 grams linguine; 1 handful flat-leaf parsley, chopped

Heat the olive oil in a frying pan. Cook the pancetta or bacon until crisp, add the courgettes, then sizzle for 4 mins until golden.
