For the Classic Chocolate Whoopie: Position a rack in the center of the oven and preheat the oven to 375°F. Line two baking sheets with parchment paper.
Sift together the flour, cocoa powder, baking soda, and salt onto a sheet of waxed paper. In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter, shortening, and brown sugar on low speed until just combined.
