If you have salt, mushrooms, ground thyme, and a few other ingredients on hand, you can make it. It is a good option if you're following a dairy free and pescatarian diet.
Instructions
In a nonstick skillet, saute the mushrooms, onions, garlic, salt, thyme and pepper in 2 teaspoons oil until vegetables are tender. Stir in bread crumbs.
Sprinkle fillets with lemon juice; spread evenly with vegetable mixture and roll up.

Brush with remaining oil.
Bake at 400° for 20-25 minutes or until fish flakes easily with a fork.
Recommended wine: Pinot Noir, Sparkling Wine, Pinot Grigio, Gruener Veltliner
Pinot Noir, Sparkling Wine, and Pinot Grigio are my top picks for Flounder. Fish is as diverse as wine, so it's hard to pick wines that go with every fish. A crisp white wine, such as a pinot grigio or Grüner Veltliner, will suit any delicately flavored white fish. Meaty, strongly flavored fish such as salmon and tuna can even handle a light red wine, such as a pinot noir. You could try MacMurray Ranch Russian River Pinot Noir. Reviewers quite like it with a 4.3 out of 5 star rating and a price of about 24 dollars per bottle.

MacMurray Ranch Russian River Pinot Noir
Our MacMurray Ranch 2012 Russian River Valley Pinot Noir opens with aromas of lavender and boysenberry that give way to flavors of dark cherry and pomegranate. This luscious wine has a silky mouthfeel, framed by subtle hints of oak from barrel aging.
